Zucchini Patties on salad leaf with Radicchio & Tahin

Ingredients (for 2-3 pers.):

10-11 patties:
3 medium-sized zucchini
2 spring onions
4 tbsp rye flour
1 tbsp spelt semolina
3 free-range eggs
6 sprigs fresh thyme
2 pinches nutmeg
salt & pepper
3 cloves of garlic
3 tbsp rapeseed oil

others:
6 large salad leaves 
1/2 small radicchio
3 tbsp Tahin
2-3 baby avocado or 1 avocado
1 tablespoon goji berries
1 tbsp pine nuts
1 tbsp walnuts
Preparation:
  1. Fry the pine nuts and walnuts in a pan without oil.
  2. Wash the ingredients for the patties.
  3. Grate the zucchini finely.
  4. Cut the spring onions into fine slices.
  5. Put the spring onion rings and the zucchini rasp in a bowl, beat in the eggs, add the spelt semolina and the rye flour and mix. Refine with thyme, salt, pepper and nutmeg and press in the garlic cloves.
  6. Heat rapeseed oil in a pan and form small patties by hand, place in the pan and fry on each side for about 2 minutes. 
  7. Wash radicchio and salad. Put the lettuce leaves on the plate and two patties on top. Garnish with tahin, goji berries, roasted pine nuts and walnuts.
  8. Finely chop the radicchio, halve the avocados and garnish on the plate.
  9. Serve and enjoy. Bon Epi-tit <3 !
