westafrican peanut butter stew

A wonderfully aromatic dish, which is not only easy to prepare, but also great as a "leftover" lunch to take with you the next day. An absolute "must cook" for all peanut lovers. Fully filled with proteins and nutrients, the dish provides you with healthy fats, potassium and other vitamins, minerals and high-quality fiber.

INGREDIENTS (4 pers.)

1 sweet potato
1 bunch soup vegetables
180 gr mountain lentils
1 cup chickpeas (cooked chickpeas from a jar or tin)
1 bay leaf
salt & pepper
1 small red onion 
2 cloves of garlic
2 cans of tomato pieces
2 tbsp tomato paste
3 tbsp peanut butter (without sugar)
2 tbsp peanuts 
1 vegetable fond cube (without sugar)
1 teaspoon dried and ground spices (we like to use the Sonnentor spice Yoko's Tofu spice for stews, but you can also put the mixture together yourself or have it put together in the spice shop):
Coriander, turmeric, lemongrass, cumin, mustard seeds, ginger, sweet paprika, garlic fenugreek, fennel, rosemary, thyme, sage
optional: some chili or paprika, spicy 

Side:
1 cup Basmati rice
sea salt
1 bunch fresh coriander
1/2 lemon

PREPARATION:
  1. Simmer the mountain lentils with 3 parts of water for 30 minutes according to the instructions on the packet.
  2. Finely chop the onion and fry it in 1 tbsp rape oil in a casserole dish together with the pressed garlic cloves until translucent. 
  3. Clean and chop the soup vegetables.
  4. Peel and chop the sweet potatoes.
  5. Put the vegetable cubes into the casserole and sauté a little. 
  6. Put tomato pieces from the tin as well as tomato paste into the pot.
  7. In a cup dissolve a vegetable stock cube in boiling water and put half of the contents into the casserole.
  8. Add the spices and bay leaf to the pot and simmer for about 15 minutes. After these 20 minutes add chickpeas, peanut butter and mountain lentils and simmer for another 20 minutes. 
  9. While the stew is simmering, add the water for the rice and let it boil for 10 minutes. 
  10. Garnish your stew with peanuts. Arrange the rice in a bowl, add some lemon juice and top with coriander. Bon Epi-tit ! <3
