The spicy fried cauliflower rice with roasted mushrooms

INGREDIENTS:
cauliflower rice
1 cauliflower 
4 tbsp soy sauce 
2 spring onions
4 tbsp sesame oil
2 cloves of garlic
1 cm thick slice of ginger
shiitake & enoki
​200 g shiitake
1 small box of
​ enoki mushrooms
4 tbsp sesame oil
1- 2 tsp of fish oil
PREPARATION:
  1. Wash the cauliflower and grate it into "rice" with a vegetable grater.
  2. Finely chop the ginger and garlic, cut the spring onions into fine rings. 
  3. Heat sesame oil, ginger, garlic and the light part of the spring onions in a pan. 
  4. Now add the rice and stir-fry until it is hot. 
  5. After about 3 minutes, deglaze with the soy sauce.
  6. Fold in the remaining green spring onions and fry for 1-2 more minutes.
  7. Clean or wash the mushrooms. 
  8. Heat the oil in a pan and fry the mushrooms in it. 
  9. Stir fry until they are soft. 
  10. Deglaze with fish sauce and fry again. 
  11. Fry a handful of snap peas in oil for about two minutes. 
  12. Now arrange the cauliflower rice on four plate.s
  13. Top it with the mushrooms and garnish it with the other ingredients.

HEALTH BENEFITS:
In Japan and China, shiitake has been known for centuries, also because it grows wild there and is valued in traditional Chinese medicine because of its ingredients. It is said to help with inflammations, headaches, dizziness and stomach problems. Even small amounts are said to help against high blood pressure and lower high cholesterol levels.
