sweet scrambled eggs with coconut & maple sirup

...reminds of a "low carb" variant of Kaiserschmarrn ;)

INGREDIENTS (for 2 persons):
4 eggs
80 ml coconut milk (e.g. from a can, not coconut drink!)
1-2 tablespoons maple syrup
4 soft dates, finely chopped or 3 tablespoons raisins
1 Msp. vanilla
2 tablespoons rapeseed oil
optional: coconut flakes
PREPARATION:
  1. Beat the eggs in a bowl and mix together with coconut milk, maple syrup and vanilla.
  2. Add chopped dates or raisins in the same way and mix again.
  3. Put rapeseed oil in a pan and heat it up.
  4. Now put the egg-date mixture into the pan and turn constantly with a spatula so that the scrambled eggs are fried golden and still have a nice fluffy flavour.
  5. Garnish as you like with coconut flakes, divide on two plates & Bon Epi-tit!

Dates contain many vitamins, minerals, fiber and antioxidants that are good for our body. As a dried fruit, they contain little fat, but are very high in calories. Dates are full of fibre, which is very beneficial for the digestion and regulation of blood sugar levels..Due to their natural sweetness, dates are an ideal and healthy alternative to industrial sugar.:
