sweet potatoe salad with peanut butter dressing

INGREDIENTS:
(for two people)

4 small sweet potatoes
3 tablespoons of olive oil
1 tablespoon cumin, ground
1 tablespoon cinnamon, ground
1 tablespoon ginger, ground
Salt
freshly ground pepper

for the dressing:
3 tablespoons of apple vinegar
1 tablespoon peanut purée (unsweetened)
2 tablespoons date syrup
1 lemon, juice
2 tablespoons of water
Salt
freshly ground pepper

other:
1 bunch of Tagetes (or coriander or parsley)
1 tsp sesame

PREPARATION:
  1. Preheat oven to 200°C circulating air.
  2. Peel sweet potatoes and cut into small cubes. 
  3. Place on a baking tray lined with baking paper and mix with olive oil and spices.
  4. Bake the sweet potato cubes in a hot oven (in the middle) for about 25-30 minutes. 
  5. Meanwhile mix peanut dressing: Mix lemon juice, peanut puree, apple vinegar, water, salt and pepper.
  6. Wash herbs (marigold, coriander or parsley) thoroughly and chop coarsely. 
  7. Remove sweet potato cubes from the oven, let them cool down a little and mix them with the peanut dressing and arrange them on two plates. Place herbs on top and serve. Bon Epi-tit !

TIP:
For kids, you can either use the herbs
into the dressing, or
leave the herbs out altogether.
