2 sweet potatoes 1 avocado 1/2 bell pepper 1 lime pepper salt 1 carrot
Wash sweet potatoes. It is best to clean with a vegetable brush.
Cut the sweet potatoes in half, wrap them in aluminium foil or parchment paper and place them on a baking tray lined with baking paper. Cook in the oven at 200°C circulating air for about 40 minutes. You can test with a fork whether the sweet potato halves are already soft.
Cut the avocado in half and put the flesh in a bowl. Mix with the juice of a lime and season with salt & pepper.
Halve the bell peppers, remove seeds and cut into small cubes. Fold these into the avocado cream and garnish the sweet potato with them.
Peel the carrot with a peeler and garnish with the sweet potato.
