Sweet Potatoe Breakie Bowl

Yes, there's another way! We can not only make smoothie bowls ;D
This delicious sweet potato variant is garnished with real healthy ingredients that give you energy for a good start into the day. 
By the way, we have a lot to do at the moment. At the end of the week we have two catering jobs to do and the preparations are already in full swing.
Keep your fingers crossed that everything is going well ;)!

Ingredients:

Bowl:
1 sweet potatoe
1 can coconut milk
1 tbsp almond paste
2 tablespoons maple syrup
1 pinch. vanilla
1/2 teaspoon cinnamon

Topping:
1 tbsp puffed amaranth
1 tbsp puffed quinoa
1/2 banana
1/2 grapefruit
1 tsp white almond paste
1 tsp ground linseed
5-6 goji berries​
Preparation:
  1. Peel the sweet potatoes, cut into cubes and steam until the cubes are soft (approx. 10-15 min.).
  2. Mix the sweet potato cubes, almond paste, maple syrup, vanilla and cinnamon. Open the coconut milk tin and skim off the upper, firmer part and add to the sweet potato puree. Mix well again.
  3. Pour into a breakfast bowl and garnish with the topping ingredients as desired.
