Spring Salad

Spring also means asparagus season. We simply can't get enough of the green asparagus and could conjure up a new salad creation every day. 
One of them we'll tell you today.

Ingredients (for 2-4 people):
500 g green asparagus
1 carrot
1 small tin of chickpeas
200 g cherry tomatoes
2 tablespoons fresh chopped dill
2 tbsp fresh chopped parsley
½ Lime
4 tbsp cider vinegar
1 tbsp Tahin
1 tbsp pumpkin seeds
salt and pepper
Preparation
  1. Clean the green asparagus, remove the hard ends and cut into bite-sized pieces.
  2. Pour into a pan together with approx. 100 ml water and simmer until the water has evaporated.
  3. Remove the pan from the hot plate and allow the asparagus to cool.
  4. Wash off the chick peas.
  5. Wash and quarter the tomatoes.
  6. Peel the carrots and grate into strips with the peeler.
  7. Chop the herbs, put everything in a large salad bowl and mix well.
  8. Add lime juice and apple vinegar.
  9. Garnish with tahin and pumpkin seeds and serve.

Mmmmmmmh we already have water in our mouths again!
