shaved courgettes salad

INGREDIENTS:

2 courgettes
150 g feta
1 pepperoni, piquant (not too hot)
freshly ground pepper
Salt
1/3 bunch fresh parsley
1 small clove of garlic

Dressing:
1 lemon
2 tablespoons cider vinegar
1 tablespoon of olive oil

PREPARATION:

1. Wash the courgettes thoroughly and peel them all around with a peeler. Place the peeled strips in a bowl.
2. Squeeze the lemon and pour the juice over the courgette strips.
3. Wash the pepperoni, cut lengthwise and remove the seeds. Cut into small pieces and add them to the courgette strips in the bowl.
4. Wash parsley thoroughly, chop finely and mix with a pressed clove of garlic. Pour this mixture over the courgette strips, fold in the fat cubes and mix everything again thoroughly.
5. Now season to taste with apple vinegar, olive oil, salt and pepper and serve. Bon Epi-tit !
