Salad Wraps

Good evening, dear ones!
Once again such a beautiful day! We hope you enjoyed the sun and are now ready for two closed supermarket days haha! No fun, we wish you of course beautiful Whitsun. Today we prepared Salad Wraps. With oven fries and roasted cauliflower. We have a lot of work to do at the moment, because as you know our first book is sooo close to release. Meanwhile we have a cooperation with Schneekoppe which we are slowly starting to realize. We are looking forward to the new challenges and are curious what you think about it.
Now the recipe for you ;)

Ingredients (for 3-4 pers.)
1 cucumber, thinly sliced & rolled
4 radishes, cut into thin rings
1 bell pepper, cut lengthwise
1 avocado, lengthwise cut
1 cauliflower 
1 head of lettuce (with leaves as large as possible)
1 smoked tofu (we chose one with olives)
1 cup full of white beans in a jar
approx. 1.5 kg potatoes (firm or young harvest)
Hummus (either bought or made from chickpeas, olive oil and Tahini)

Spices:
coarse sea salt, pepper & olive oil for the oven fries
Fenugreek & black sesame for cauliflower 
Preparation
  1. Wash potatoes with skin and cut into french fries length. In a bowl mix with olive oil, coarse sea salt and pepper. Place on a baking tray lined with baking paper and add the French fries. Fry at 200°C circulating air for about 15-20 minutes until golden brown and crispy.
  2. Cut the cauliflower lengthwise and place the steak-sized crowns on a baking tray lined with baking paper. Sprinkle with fenugreek and sesame seeds. Add to the chips in the oven and let it crisp for about 10 minutes.
  3. Cut the tofu into slices and fry them crispy on both sides in a pan without oil. (approx. 4 min)
  4. Arrange paprika, avocado, cucumber, beans, hummus and radish in small bowls on the table.
  5. Pluck the leaves of the head of lettuce and wash thoroughly. Place on the table in a large bowl.
  6. Take the potatoes and cauliflower out of the oven and place them on the table.
  7. Now you can fill your salad wraps as you like. You can also add the chips to the salad wrap or simply eat them with it. Bon Epi-tit <3 !
