Ingredients: Oven-potatoes: 10 organic carrots (violet primeval carrots & orange) 3 sprigs fresh sage 4 tbsp olive oil 1 teaspoon paprika noble sweet 1/2 tsp chilli flakes 1 tsp turmeric powder Pepper & sea salt Potato celery mash: 4 large potatoes, floury cooking 1 head celery 1/2 cup spelt or oat drink 3 pinches. nutmeg salt
Wash and quarter carrots lengthwise.
Pour into a large bowl & add olive oil and herbs (turmeric, sweet paprika, chilli flakes, sea salt & pepper) & mix well.
Place on a baking tray lined with baking paper and cover with fresh sage.
Bake at 180°C circulating air for approx. 30 minutes until the potatoes are golden brown & soft.
Meanwhile, wash the potatoes and halve them. Steam in a saucepan for 30 minutes until soft. Peel and chop the celery and add to the potatoes at 15 minutes of the potato cooking time for another 15 minutes.
Peel the potatoes and process them and the soft celery with a rammer to a puree.
Mix the puree with 3 Msp. nutmeg as well as some sea salt and 1/2 cup spelt or oat drink.
Serve potato-celery-mash with baked carrots & enjoy. Bon Epi-tit <3!
