Quinoa Pizza

INGREDIENTS:
  • 200 gr Quinoa
  • 100 gr Cashew nuts
  • 1 can of strained tomatoes
  • 100 gr fresh baby spinach
  • 250 gr cherry tomatoes
  • 2 cloves of garlic
  • 8-10 Kalamata olives 
  • salt, pepper
  • 4 tsp vinegar
  • 1/2 lemon
  • 1 tsp olive oil
  • at will: Hemp seeds for decoration
Preparation:
  1. Soak cashew nuts for 2 hours. 
  2. Prepare quinoa according to package instructions.
  3. Mix the quinoa with vinegar, salt, pepper and a clove of garlic in a blender and pour the liquid mixture onto a baking tray lined with packing paper.
  4. Place in the oven at 180°C circulating air for 20 minutes.
  5. Take the cashew nuts out of the soaking water and purée them with a clove of garlic, olive oil, salt and pepper as well as some lemon juice (juice pressed from 1/2 lemon) with a blender.
  6. Halve the cherry tomatoes.
  7. Remove the dough from the oven and spread with the tomatoes. Add the cherry tomato halves and season with a little salt and pepper.
  8. Spread some spinach, olives and some cashew cheese over the pizza and bake for another 10 minutes at 180° C.
  9. Take out the pizza, spread fresh spinach and cashew on top and serve.
