Petites Galettes with blueberries and figs

Maybe you saw our blogpost with the recipe Peach Galette a few days ago & you're not surprised anymore. But with this recipe I would like to explain to you again how easy & delicious these galettes are conjured up. No matter which size, no matter which fruits. This time we decided to make two small galettes, one with figs and one with blueberries (we love the blueberry one ....!!!!!). So if you come for a spontaneous visit you can impress with a galette, because who doesn't have flour, semolina, some oil & water at home? Because the dough is so simply prepared. The rest is almost arbitrary ;) Have fun with the recipe, x F

Ingredients (for 2 small galettes):
Dough:
80 gr spelt flour
80 gr spelt semolina
3 tbsp rapeseed oil
70-80 ml water
1/2 teaspoon cinnamon
1 pinch Bourbon Vanilla
other:
1 handful blueberries
1 fig
2 tbsp chopped almonds
2 tbsp coconut blossom sugar
Preparation:
  1. Mix the ingredients for the dough in a bowl to make a dough lump. Place the dough lump in the refrigerator for 20 minutes, wrapped in cling film.
  2. Wash the blueberries. Wash figs and cut into thin slices.
  3. Remove the dough from the fridge and divide into 2 parts. Now roll on a baking paper sprinkled with spelt flour with a rolling pin. 
  4. Cover the base with blueberries and fig slices. Make sure that about 4-5 cm remain free at the edge. Sprinkle with coconut blossom sugar and almonds. Now fold in the corners so that the fruits are enclosed. The partial edges can be spread with egg yolk or some oil as desired.
  5. Bake in the oven at 180° C for about 25 minutes. Remove and enjoy lukewarm.
