Mediterranean Fish

It's summer and we're dreaming of southern regions. Since I was only recently in Italy, I copied a classic recipe. Fish from the oven - in the brew. So tasty, so simple and so healthy. We used a sea bass (right, also called Loup de mer). It has great white meat and tastes great with some olive oil and sea salt. With a glass of wine you can (quasi) smell the sea ;) Have fun with the recipes & as always Bon Epi-tit ! <3 F

Ingredients
2 Sea bass - scaled & gutted
fresh rosemary
fresh parsley
10 small tomatoes
8 green olives pitted
4 cloves of garlic
5 shallots
1 tsp capers or 5 capers apples
1/2 cup white wine 
3 tbsp olive oil
2 tbsp red or white wine vinegar 
freshly ground pepper
sea salt​
Preparation
  1. Wash the fish and pat dry with a kitchen towel. Place in a large ovenproof dish.
  2. Halve the tomatoes, chop the garlic and cut the shallots into rings. Put everything into the oven dish.
  3. Add olives, capers or caper apples and fresh herbs to the fish. Pour olive oil, white wine vinegar and white wine over the fish. Season with salt and pepper.
  4. Put into the oven at 200 degrees circulating air. Depending on the size of the fish, fry in the oven for about 25-30 minutes.

As a side dish we recommend a bean salad and baked potatoes. For the baked potatoes, simply season the potatoes with olive oil, rosemary and sea salt and place on a baking tray. Fry at 200 degrees convection for 25 minutes (same time and heat as the fish). Place the baking tray with the potatoes above the fish. 
For the bean salad mix kidney beans and white beans from the glass, cut red onions and taste it with some white wine vinegar, olive oil, salt and pepper.
