Lunch-Box: 1/2 cup spelt 1/2 feta cheese 4 cherry tomatoes 1/2 avocado 5 slices of cucumber some fresh chive 1/2 lemon (juice) seeds, as desired (pumpkin seeds, sunflower seeds or pine nuts as on the picture)
Dressing: 2 tbsp apple cider vinegar 1 tbsp olive oil pepper & salt best take with you in a small screw glass separately or put in the snack tin with you
small Dessert-Box: 1/2 grapefruit 6 dried dates
Boil the spelt according to the package instructions: Bring 1 cup of lightly salted water to the boil and add the spelt grains. Simmer for about 15-18 minutes at medium heat until the water is boiling.
Rinse the spelt grains with cold water, sieve and place in a snack tin. We have a cheap box made of thick glass (available at IKEA ;)).
Cut the avocado, feta, cucumber and tomatoes into small pieces and fill the box as well.
Fry the pine nuts or other seeds in a pan without oil and pour into the box over the salad.
Chop the chives and add them.
Peel the grapefruit and place in a small lunch box with the dates.
