Hash browns with fried egg

INGREDIENTS:
(for 2 pers.)

4 medium firm boiling potatoes
2 tablespoons rapeseed oil
Salt
freshly ground pepper
2 organic eggs

at will:
fresh herbs (e.g. parsley and/or dill)
PREPARATION:
  1. Wash potatoes thoroughly and grate finely. 
  2. Collect the grated potatoes in a bowl and wash them with water, so that the starch of the potatoes is washed out. This step is very important because the starch would keep the potatoes from getting crispy.
  3. Put the potatoes in a sieve and dab them dry with a kitchen towel.
  4. Heat some rapeseed oil in a frying pan, add the potato flakes and press firmly. 
  5. If you want the hash browns to stay whole, use a spatula to carefully turn the potatoes. Otherwise, you can turn them as you like with a spatula so that they become crispy on all sides. This process takes about 7-10 minutes. 
  6. In the meantime, fry two eggs in a second pan. Add some oil to the pan and beat the eggs at the edge of the pan until a small crack appears. Pull the crack apart with your fingers and let the inside of the egg slide into the pan. Fry at medium temperature for about 2-3 minutes, not turning. 
  7. Place the fried eggs on the hash browns, season with salt and pepper and serve. You can garnish them with fresh herbs if you like. Bon Epi-tit!
