INGREDIENTS: (for one oven dish 27x18 cm, makes about 12 brownies)
250 g buckwheat flour 300 g coconut blossom sugar 60 g raw cacao powder 1 teaspoon chia seeds + 4 tablespoons water 1 teaspoon baking soda 100 g coconut oil 30 g peanut or rape oil 1 Msp. vanilla 100 ml oat drink 1 pinch of salt
Preheat oven to 190°C top-bottom heat.
Mix the chia seeds with water and leave to swell for 10 minutes.
Mix all dry ingredients together.
Add the oat drink, melted coconut oil, vegetable oil and swollen chia seeds to the ingredients and mix to a homogenous dough with a mixer. The dough is slightly thicker than normal cake dough.
Line an oven dish with baking paper and pour in the dough. Now spread the dough evenly in the form with a spoon or dough spatula.
Put the form in the oven and bake for about 25-30 minutes. Take it out of the oven and let it cool down in the form. The cake tastes delicious lukewarm or completely cooled down.
