Galette de chevrè & salade au citron

INGREDIENTS (for 1 galette):

Galette dough:
100 gr spelt flour
100 gr spelt semolina
3 tbsp olive oil
2 tsp Chia seeds
150 ml water

Layer:
1 cup sheep yoghurt (125 gr)
1 cup goat cheese (150 gr)
1/2 red onion 
1 sprig rosemary
1 courgette
1 fig
salt
pepper
2 cloves of garlic
1 tbsp olive oil
optional: Pecorino 
PREPARATION:
​
  1. Put all the ingredients for the galette dough in a bowl and form it into a dough ball with your hands. Set aside and let rest for 20 minutes.
  2. Mix sheep yoghurt and goat cheese. Press the garlic cloves and add to the bowl. Season with salt and pepper and add dried herbs (herbs of Provence) if necessary.
  3. Wash and slice the courgettes.
  4. Peel the onion and cut into rings.
  5. Wash figs and cut into slices.
  6. Preheat oven to 200°C degrees circulating air.
  7. Now place the Galette dough on a baking tray lined with baking paper and roll out very thinly with your fingers or a rolling pin and a little flour. 
  8. Spread the fresh cheese cream on the rolled out dough and leave an edge at the edge about 4 fingers wide, this will be folded later.
  9. Garnish the courgette slices, onion rings, figs and rosemary on the galette and fold in the sides. 
  10. Sprinkle with olive oil, optionally grate Pecorino over it and bake in the oven for 15-20 minutes.
  11. While the galette is baking in the oven, you can add a fresh salad. As an example we have the salade au citron for you. Bon Epi-tit <3 !

salade au citron

INGREDIENTS:

1 grapefruit
1 orange
1/2 avocado
1 fennel
4 onion rings
some dill
garden cress
salt & pepper
olive oil
apple cider vinegar
PREPARATION:
​
  1. Peel and slice the orange and grapefruit.
  2. Wash the fennel and cut into fine rings.
  3. Cut onion rings.
  4. Wash the dill and pluck from the firm stalk. 
  5. Peel avocado, remove seeds and cut into pieces.
  6. Place all ingredients in a bowl and season with cider vinegar, olive oil, salt and pepper.
  7. As garnish you can use dill & garden cress.
  8. Optionally you can serve the salad with the galette.s. Bon Epi-tit <3 !
HEALTH BENEFITS:
Bitter substances, antioxidants, vitamin C and various trace elements - it is worth including grapefruit in your diet. The bitter substance naringin breaks down cholesterol by lowering the blood sugar level. This is also good for the prevention of diabetes.
