Fried chicken with Bavarian potato salad

Ingredients (for 2 per.):

for the fried chicken:
3 chicken legs
Rapeseed oil (for baking/frying)
100 g spelt flour
200 g spelt breadcrumbs 
2 organic eggs
Salt
freshly ground pepper

for the potato salad:
1 good handful of potatoes, mainly waxy
5 radishes
1/2 cucumber
1/2 bunch parsley
1 vegetable stock cube
2 shallots
4-5 tablespoons cider vinegar
2-3 tablespoons of rape oil
1 tsp medium hot mustard
Salt
freshly ground pepper

  1. Wash the potatoes thoroughly and cook them with their skin in a saucepan until they are soft (depending on size approx. 30-45 minutes)
  2. Wash the cucumber, radish and parsley. Cut the cucumber into fine slices. 
  3. Cut the radishes into slices and chop the parsley.
  4. Take the potatoes out of the pot and peel them while still warm. It is best to use a small fork and a paring knife so that you do not burn yourself.
  5. Cut the peeled potatoes into slices and place them in a salad bowl.
  6. Peel and finely chop the shallots and add them to the potatoes in the bowl.
  7. Dissolve the vegetable stock cube in a cup of boiling water and pour the vegetable stock over the potato and shallot mixture. Add the apple vinegar and let it rest for 5-10 minutes.

8. add radishes, cucumber and parsley to the salad bowl and fold in
9. season salad with salt, pepper and apple vinegar. Shortly before serving, pour rapeseed oil over it (this will "seal" the taste) and try again and refine it if necessary.

10. preheat oven to 180° C circulating air.
11. now prepare the fried chicken: Set up a "breading line" for it: Take three plates, fill one with spelt flour, one with breadcrumbs or breadcrumbs and the third with eggs. Season the eggs in the bowl with a little salt and pepper and whisk with a fork. 
11. put rape oil in a pan about 2 cm high and heat it up. Now fry the fried chicken on both sides until golden brown. Put the fried fried chicken in the oven and bake for another 15 minutes at 180° C convection oven.
12. serve fried chicken with potato salad & enjoy. Bon Epi-tit!
