Easy glutenfree apple pockets

INGREDIENTS:
3 apples
1 teaspoon cinnamon
80-100 g maple syrup
10 rice paper 
1 teaspoon locust bean gum (or cornstarch)
1 tablespoon rape or peanut oil
PREPARATION:
  1. Wash apples thoroughly and cut into small pieces.
  2. Heat apple pieces together with cinnamon and 100 ml water and maple syrup in a small pot and simmer for about 10-12 minutes. 
  3. At the end of the cooking time, stir in a spoonful of carob gum so that the water thickens a little. Stir thoroughly and take it off the stove.
  4. Prepare a large bowl of warm water. Place one or two rice paper, yours should be particularly thin, put it in and take it out again. 
  5. Place the cooked apple pieces in the middle of the rice paper like a summer roll and fold in the top. Fold in the left and right side and close the roll from below.
  6. Place the rolled apple pockets on a baking tray lined with baking paper and brush with a little oil. 
  7. Bake in the preheated oven at 180°C circulating air for about 10-15 minutes. Remove from oven and let cool down. The apple pockets only become firm during the cooling process. Bon Epi-tit <3 !
