christmas recipes: pistachio-tigernut cookies (glutenfree & vegan)

INGREDIENTS:
300 g oat flour, gluten-free + 50 g oat flour for rolling dough
80 g Tiger almonds, planed
2 tbsp pistachio jam
90 g rapeseed oil
120 g honey
1 egg OR 3 tsp chia seeds + 2 tsp water
1 tsp gingerbread spice
1 Msp. vanilla
PREPARATION:
  1. Mix 300 g oat flour with sliced almonds, pistachio nut, honey and spices.
  2. Either add a dough OR let the chia seed mixture swell for about 5 minutes and then add to the dough.
  3. Knead the dough into a ball with your hands so that the ingredients mix well. Let the dough rest for 10 minutes.
  4. Meanwhile preheat the oven to 200 degrees top and bottom heat. 
  5. Place a baking paper on the worktop and sprinkle with some oat flour. Now form a cookie roll with a diameter of 4-6 cm out of the dough ball.
  6. Cut off approx. 2 cm thick slices from the cookie roll with a sharp knife, make them a little rounder and place them on the baking paper. Repeat this process until the dough is used up. The dough should make about 20 biscuits.
  7. Place the baking tray with the biscuits in the oven (middle shelf) and bake for 10 minutes. After 10 min. baking time take the tray out of the oven and let the cookies cool down. 
  8. The biscuits can be kept for about 1.5 months in a biscuit tin.
HEALTH BENEFIT:
Almonds are an excellent source of healthy fats, protein and fibre. They are also rich in magnesium, vitamin E and other micronutrients. A small amount of energy is excreted unused by the body.
Almonds contain a lot of vitamin E, an important antioxidant. It acts in the body as a radical scavenger and thus supports the health of the cells. A sufficient supply protects against numerous diseases.
