Chocolate Banana Bread with roasted almonds

Ingredients (Banana Bread):
250 g flour
100 g ground nuts
300 g banana
100 ml rapeseed oil
50 ml almond milk
1 tablespoon baking powder
1 teaspoon cinnamon
150 g raw cane sugar
Ingredients (chocolate cream):
100 g raisins
4 tbsp cocoa, raw food quality

Ingredients (almonds):
100 g whole almonds, natural,
50 ml water
50 g coconut blossom sugar
Preparation
  1. For the chocolate cream, soak the raisins in hot water for at least 20 minutes.
  2. Drain the water, add the raw cocoa to the raisins and puree finely.
  3. For the cake, puree the bananas, rapeseed oil, almond milk and sugar in a blender.
  4. Mix flour, baking powder and cinnamon in a bowl.
  5. Add the liquid mixture to the flour mixture and mix with a hand mixer to a smooth dough.
  6. Finally, carefully stir in the nuts. 
  7. Place the dough on a baking tray lined with baking paper and cover with aluminium foil.
  8. Bake at 180° C for 40 minutes.
  9. To test whether the cake is ready, simply insert a toothpick and see if any liquid dough remains on it.
  10. Cover the finished cake with aluminium foil and let it cool down.
  11. For the roasted almonds, mix the water with the coconut blossom sugar until it is boiled up. Boil to a syrup.
  12. Add the almonds and stir constantly at level 7 until the steam has completely evaporated. At the end it cannot be stirred any more, the almonds become mat.
  13. Place the roasted almonds on baking paper and let cool.
  14. Coat the cooled cake with chocolate cream, cut into squares and garnish with the roasted almonds.
HEALTH BENEFITS:
In addition to healthy fats, nuts also contain high-quality protein, fibre, secondary plant substances and are a good source of vitamins and minerals. This cocktail can improve the effect of insulin, reduce oxidative stress and have a positive effect on blood fat values.
