Chicken breast & TomAvo Salsa

Yay, finally Friday! This week at work was probably more exhausting for everyone than usual, because outside the sun shines and inside the offices not only brain cells burn, but sweat flows endlessly. Honestly, we made ourselves a comfortable week with Outdoor Office & I can tell you it was at least as pig-hot. But isn't that terribly "German" to get excited about the heat again? We are so grateful for the wonderful summer and look forward to dresses, short skirts and shirts. The little ones can play outside and we can have a barbecue. And there I have a small recipe for you what is also really great on the grill convertible. Because everybody knows that every meat tastes delicious on the grill. (of course it also works in the frying pan ;)!)
By the way, we like to eat this dish after sports, because it contains little "carbs" and still provides great nutrients. Ok yes & first of all because it's delicious!

Ingredients
4 chicken breast fillets
2 tbsp rapeseed oil
1 organic lemon
3 large tomatoes
1 ripe avocado
1/2 red onion
fresh basil
fresh parsley
salt & pepper
apple cider vinegar
Olivenöl​
Preparation
  1. Wash off chicken breast fillets and pat dry with a kitchen towel. 
  2. Heat a small pan with 2 tablespoons of rapeseed oil and add the fillets. In the pan you can season the meat with salt and pepper. Fry on both sides until golden brown and take off the heat. (Caution! In contrast to red meat, chicken meat must always be well fried!). Leave the meat in the pan for a while and rub a little lemon zest over it. Now halve the lemon and pour the juice of half a lemon over the chicken into the pan. 
  3. While the chicken is cooking in the pan, the tomatoes can be washed and cut into small pieces.
  4. Cut the avocado in half and dice it as well.
  5. Peel and chop the red onion.
  6. Put the chopped onion, avocado cubes & tomato pieces in a small bowl and season with chopped fresh parsley, salt & pepper and apple vinegar & olive oil.
  7. Take the chicken out of the pan, put it in a deep plate and spread the tomato and avocado salsa over it. Garnish with a leaf of basil and serve.
