Burrito Bowl

Yay, we had again guests in our show kitchen (this time in our little garden) !
We were allowed to feed the video-team of the Make up factory - because our cooperation partner Next Season TV is shooting their tutorials - and we were very happy with the spring temperatures!
Ror a burrito bowl. basically we love the concept "shared table",
because there is a lot of communication at the table and the colourful dishes are
all over the table. So we have a 3 metre long blackboard
and starting cooking. Of course we have the recipe here
for you, even if this bowl is called: seasonal or
make it as you like
& we wish you a wonderful week!

INGREDIENTS (for 4 persons):

Guacamole:
1 avocado
1 large tomato
1/2 red small onion 
1 clove of garlic
juice of a lemon  

Sweet potato tofu cubes:
1 shallot
1 clove of garlic
1 tbsp rapeseed oil
1 sweet potato
1/2 pkg. tofu
1 tsp Raz el Hanout
salt & pepper

Chili sin carne:
1 glass kidney beans (approx. 150 g)
1 glass of corn (approx. 125 g)
2 cans of tomatoes
1 clove of garlic
1/2 red onion
1 tsp rapeseed oil
salt & pepper
1 Msp. chilli, dried
1/2 tsp smoked bell pepper spice

steamed broccoli:
1 broccoli
1 tsp Holy Veggie spice (use Sonnentor herbal mixture if you don't have it, dried thyme)

only cut these ingredients (wash if necessary):
2 baby avocados (one half p..Pers.)
1 red pepper
Fresh herbs of your choice (we chose parsley, coriander & mint)
10 olives, cut
2 limes, cut into quarters
2 spring onions, cut into fine rings
1 cup wholemeal rice, prepared according to package 
1/2 pkg. feta, dice

PREPARATION:
  1. Guacamole: cut avocado in half, remove flesh with a spoon and place in a bowl. Chop the onion and press the garlic clove. Cut the tomatoes into small pieces and mix with the remaining ingredients. Flavour with lemon juice, salt and pepper. Add some fresh coriander to taste.
  2. Chilli sin carne: chop onion and garlic and sauté in rapeseed oil until translucent. Add kidney beans, tomato pieces and corn, simmer for 5 minutes and season with chilli, smoked paprika, pepper and salt.
  3. Broccoli: Steam broccoli either in the oven with steam function for 10 minutes at 100°C OR in a large pot with a steamer insert for 10 minutes. Then pour "Holy Veggie" or thyme over the broccoli.
  4. Sweet potato tofu cubes: peel and dice sweet potatoes. Cut the shallot into fine rings and fry in a pan with some rapeseed oil together with a pressed clove of garlic and Raz el Hanout until translucent. Add the diced sweet potatoes and fry for 10 minutes. Dice the tofu. After 10 minutes add diced tofu. Brown for another 5 minutes.
  5. Wash and cut further ingredients if necessary and arrange in bowls or plates. Now arrange all ingredients on the table. Everyone can now arrange his bowl as desired. Bon Epi-tit <3 !
HEALTH BENEFITS:
Kidney beans contain significant amounts of potassium, calcium, magnesium and iron. Kidney beans consist of about 70% carbohydrates, 25% proteins and only 5% fat. This composition makes kidney beans a very healthy food that should be on the menu regularly.
