Burnt Grapefruit Salad

Grapefruit salad with caramelized onion

Ingredients:
2-3 slices grapefruit
1 handful fresh salad (lamb's lettuce & rocket salad)
4 cherry tomatoes
4 cucumber slices
1/2 avocado
1/2 red onion
3 stems fresh parsley
1 tbsp maple syrup​

Dressing:
juice of 1/2 lemon
1 tbsp olive oil
2 tbsp apple cider vinegar 
salt & freshly ground pepper

Preparation:
  1. Peel the onion and cut into small slices. Simmer them in a pan with maple syrup so that the onions are caramelized and steamed glassy. Place in a bowl and let cool.
  2. Wash salad, tomatoes, parsley and cucumber thoroughly. Drain the lettuce and place in a salad bowl. Cut tomatoes & cucumber slices in half and add to the bowl.
  3. Chop the parsley & pour over the salad.
  4. Fry grapefruit briefly from both sides in a pan without oil. Remove the edge as desired and add the warm grapefruit pieces with the onions to the salad.
  5. Mix the ingredients for the dressing and pour over the salad. Mix thoroughly, cut half avocado into slices, place on top & serve.
