Breakfast oatmeal with berries

Ingredients:
130 g oat flakes
100 g apple puree
100 ml oat milk, unsweetened
2 tablespoons rice syrup or coconut blossom sugar
150 g frozen berry mixture 
6 walnuts
2 free-range eggs
1/2 teaspoon baking powder
1 Msp. Bourbon Vanilla
1/2 tsp cinnamon
1 pinch of salt

Preparation:
  1. Preheat oven to 180 °C top/bottom heat (160 °C convection oven).
  2. Defrost the frozen berry mixture in a bowl for approx. 20 minutes (if you want to shorten the step, simply melt it briefly in a water bath similar to chocolate, simply put the berries in a metal bowl and add them to the boiling water so that the berries defrost faster).
  3. Coarsely chop the walnuts.
  4. Now mix all ingredients in a bowl.
  5. Line a small casserole dish (20x20 makes your oatmeal a bit higher, 36x21 a bit flatter, but it works the other way round as well) with baking paper and put the dough in it. 
  6. Bake at 180 degrees for about 35-40 minutes until golden brown. Take out of the oven and let it cool down a little. It tastes best lukewarm ;)! Good Epi-tit !

PS: If there is some left over, keep it in the fridge and the next day reheat it in the oven and enjoy.
