Baked apple with vanilla sauce (vegan)

After a hearty meal like Schnitzel and Co. the body usually feels like something sweet.
But sweet does not always mean sin, which we want to show here with our variant of the baked apple. And the whole thing is completely nut-free - for all allergy sufferers among you.

INGREDIENTS:
4 apples 
2 cinnamon sticks
½ cup maple syrup
1 handful of dried fruits (figs & apricots)
½ cup apple juice
 
Sauce:
1 vanilla pudding powder
600 Soy milk
3 tablespoons maple syrup
some lemon zest
1 Msp. Tonka
 
nut-free "marzipan":
100 g spelt semolina
100 g Rapadura whole cane sugar
75 g vegan butter
1 tsp vanilla extract
1 pinch salt
PREPARATION:
  1. For the marzipan, mix all the ingredients together. If the butter is too hard, heat a little so that the "marzipan" can be kneaded well.
  2. Hollow out the inner stalk of the apples with a knife and fill with approx. one teaspoon of "marzipan".
  3. Place the apples in an oven dish. Cut the dried fruit into fine slices and press into the apples.
  4. If not all of them fit into the apples, simply put them into the oven mould.
  5. Pour the maple syrup, apple juice and cinnamon sticks into the mould and place in it.
  6. Bake the apples for 50 minutes at 200 degrees top and bottom heat.
  7. Meanwhile prepare the vanilla sauce. Heat soy milk, stir in pudding powder, add maple syrup and whisk.
  8. Add lemon zest and tonka and bring to the boil for about 3 minutes.
  9. Garnish the baked apple with vanilla sauce and serve. Bon Epi-tit !
