Asian pumpkin tartar (1st course of the Asian Fusion menu)

This recipe was created in cooperation with Braun and the MultiQuick 9 (product promotion)
Christmas is the celebration of love and community.
Especially this year, when everything was different, we realized again how important good friends, family and the community are.
That's why, in cooperation with Braun and the legendary MultiQuick 9, we have come up with another menu that will be a treat for your taste buds. Under the motto "Should It Blend", we were challenged to bring together flavors that you wouldn't expect to find together on one plate.
We then ventured into Asian cuisine and tried to modify familiar aromatic dishes with surprising ingredients - true to the Epi-Food credo.
Admittedly, the creation was a bit more elaborate, as we were aiming for a high level of flavor perfection.
But thanks to Braun's MultiQuicks 9, which is super easy to use, everything worked out just as we imagined.
The flavors combined perfectly and the result is three wonderful dishes starting
​with the 1st course:

Asian pumpkin tartar (4 p.)
Ingredients:
1 Hokkaido pumpkin
1 avocado 
1 lemongrass stalk
8 Thai basil leaves
½ bunch cilantro
1 spring onion
1 lime
2 garlic cloves
2 cm thick slice of ginger
2 tablespoons tamari
1 tablespoon fish sauce
2 tbsp roasted sesame oil
1 tablespoon honey
4 tbsp. water
2 tbsp. pumpkin seeds
Lime as decoration
Preparation:
  1. Cut pumpkin into small cubes. The MultiQuick 9 from Braun is very helpful for this, as you can cut uniformly small cubes in no time.
  2. Steam the pumpkin cubes for 8 minutes in a non-greased pan, covered, at medium temperature, stirring occasionally.
  3. Transfer al dente squash cubes to a large plate and return 4 tablespoons of the squash cubes to the pan with 4 tablespoons of water. Allow to soften for an additional 5 minutes.
  4. Transfer soft cubes to a separate small bowl and let cool briefly.
  5. In the meantime, finely chop lemongrass, Thai basil, cilantro and green onion. Again, the MultiQuick 9 from Braun is a good support. With the shredder attachment, press the "P" function 2 times at the highest speed.
  6. Remove the herbs from the bowl and set aside.
  7. Do not rinse the attachment bowl, but prepare the rest of the dressing in it. For this, peel the garlic cloves and add them. Also add ginger, lime juice, tamari, fish sauce, toasted sesame oil, honey and water. Puree everything finely.
  8. Mix the chopped herbs into the dressing and set aside.
  9. Now add the soft pumpkin cubes and puree again until fine.
  10. Pit and peel the avocado and cut into cubes.
  11. Now in a bowl, gently mix the al dente pumpkin cubes, pumpkin seeds and avocado cubes with the marinade.
  12. Place a dessert ring in the center of a plate, pour in the tartar filling and gently press it onto the bottom of the plate.
  13. Carefully remove dessert ring and garnish with lime slices and Thai basil as desired.
  14. Bon Epi-tit!
