LOW CARB GRILLED & FILLED AVOCADO - filled avocado with pecan nuts

INGREDIENTS (for 4 persons):
2 avocados, halved and cored
½ red onion, finely chopped
1 clove of garlic, pressed
½ Smoked tofu, diced
1 small broccoli
½ TL smoked paprika powder
4 tbsp vegetable stock
2 tablespoons Seeberger pecans
2 tbsp rapeseed oil
some fresh coriander
PREPARATION
Grill the avocado halves on a high heat for about 7 minutes. We use our grill plate, but it is also possible on the grill or in the pan.
Heat some rapeseed oil in a pan and sauté ½ chopped onion and 1 pressed clove of garlic. Remove the broccoli florets from the broccoli stalk and place in the pan. Also add the tofu cubes to the pan. Season with smoked paprika powder, salt and pepper. Fry until hot and then add 4 tbsp. vegetable stock to the pan. This step is not necessary, but the aroma unfolds a little better.
Fry the Seeberger pecans in a small pan without oil.
Fill the avocado halves and garnish with roasted pecan nuts and fresh coriander.

HEALTH BENEFIT:
Avocados have a high content of monounsaturated fats, i.e. healthy fats. These are important for a healthy heart and also lower blood pressure. Monounsaturated fats can also prevent insulin resistance, which can lead to type 2 diabetes.
