Superfoods are on everyone's lips and have already been widely acclaimed again. But do you know what Superfoods are all about? For all those who don't know: Watch out! Superfoods are those products that have a high density of nutrients such as vitamin C or antioxidants. Acai is considered a superfood because it contains a lot of antioxidants and Chia seeds because they have a high proportion of polyunsaturated linolenic acids, which our body can convert into healthy omega-3 fatty acids. But do we have to consume products from the other side of the world? Didn't we survive without these products? These are justified questions, because before the times of globalization we still got older and our grandmothers probably never heard of this Kunia - of course we mean Quinoa =D But you know what, we can reassure you, because there are also local superfoods. Actually, that's logical, because Mother Nature will have thought that plants adapt to different environmental conditions. Our local, regional and seasonal foods contain all the minerals and vitamins our body needs in this country. But of course you have to pay attention to the quality and make sure that the fruit and vegetables do not come out of the greenhouse and grow on nutrient-free soil. Incidentally, local superfoods are linseed, blueberries, sauerkraut, wild herbs such as nettles, kale, currants and many more. Nevertheless, we don't want to demonize products like goji, acai and Co. Ultimately, they contain great nutrients and if we have the opportunity to get these high quality products, why not take the chance? Goji berries in particular have a high iron content, making them a great plant source of this important mineral for vegetarians, vegans or women who naturally have a higher iron requirement (keyword: menstruation). But now we come to the cooking evening at the Kustermann with nutrition coach and cook Amrei Korte. Amrei sees the superfood theme from the same point of view, to our delight, and makes sure that his dishes are prepared as naturally as possible. The same goes for the wasabi of cod marinated with beetroot. Did you know that the pure wasabi is not so intensely green and is usually coloured afterwards? The fresh root isn't exactly cheap, but it's definitely worth it in terms of taste and health anyway. We were welcomed in the wonderful cooking and event location on the second floor by the Kustermann at the Viktualienmarkt with a superfood drink. The water melted in our mouths because all the ingredients were delicious. We started with interesting facts about Kustermann, Amrei Korte and of course the main topic of the evening: SUPERFOODS. So that no one is starving, the preparation of dips, which could be snacked with crackers and bread were already prepared, was started immediately after the briefing. We can tell you just how deliciously delicious the dips are - they can't even be put into words.. You can find the recipes here! We continued with a beetroot pickled cod. For this the cod was wrapped in cling film with beetroot slices and allowed to draw. In addition there was a tasty algae salad and the already highly praised fresh Wasabi. By the way, algae contains many proteins and dietary fibres, and the chlorophyll also supports our oxygen transport in the bloodstream and our body's own detoxification. You can find the recipe here! Afterwards there was a fresh Edamame Avocado Zoodles salad with prawns in sesame hemp seed crust. Hemp seeds contain important vitamin B2 and all essential amino acids. And did someone say avocado? There we are, with our well-known Loveocado pop-up kitchen, like fire and flame, whereby the shrimps were also really the upper hammer. You can find the recipes here! One wonders what else it can top, but have you ever eaten flambéed salmon - soft as butter and disintegrating on your tongue - and the taste of high-quality fish and miso. Wow! Miso is fermented soy by the way. Fermented products are said to be very good for the intestinal flora and holistic health, as the fermentation process produces microorganisms and important vitamins. You can find the recipes here! We continued with one of Feli's favourite dishes: Roasted cauliflower. With this dish we immersed ourselves in the Israeli cuisine called Levante. It's a kitchen we love especially, because hummus and tahin are at home here. If you ask us both what we could always eat, it will definitely be Hummus, Tahin and Avocados. The cauliflower head marinated with turmeric was garnished with a tahin almond sauce, pomegranate seeds and mint. You can find the recipes here! As the last course before the starter we came to my favourite meal - scallops. I can eat all kinds of scallops, raw, fried or cooked. For all those who like butter there was also a heavenly smelling saffron sauce. By the way, saffron is the stamp of the crocodile plant and for 5 grams of it you need 800 flowers. By the way, it is said that it stimulates the libido and is also an ingredient of the Love-Baobabs in our cook book. You can find the recipes from the event here! The crowning finale was a vegan raspberry cheesecake. Our epi-heart doesn't need to hear any more and already we have melted away. Of course one should never draw conclusions early, but we were not disappointed. The taste even reminded us a little bit of the raspberry Ahoi Brause. You can find the recipe here! All in all it was a successful evening and the sun rose in the hearts of both of us Epi-Foodies. It's wonderful to see how the focus is increasingly on natural healthy cuisine. We didn't have to take care that we couldn't eat something because wheat and sugar, for example, were naturally not used. And we are not so used to this "self-evident" in Munich yet. In Berlin it is already an old hat, but especially here in Munich one sometimes encounters incomprehension, whereby it is so important in times of constant functioning to pay attention to our health and nutrition. All the more reason for us to be pleased that one of Munich's oldest residents - Kustermann has been around for 200 years - has taken up this topic. Amrei Korte and the Markenkultur team implemented the evening wonderfully.
